Bo Fribergs Peanut Butter Cookies

A long time ago I once had many cookbooks, then I made my own recipe list based on this huge collection of cookbooks and then, after some time I changed my Philosophy of cooking and gave away my collection of cookbooks. My recipe list was on a shelf in my room untouched for many years and I had always thought that one day I would use it; inside that list was a good number of Bo Friberg (rest in peace) cookie recipes and one of those recipes was this Peanut Butter Cookie Recipe.

You see, Bo Friberg was a very inspirational Chef for many people. His cookbooks were like the catalog style books and were big heavy books with pretty pictures and I always thought like 'i will never be able to make that'.....but once you get through all the BS, I managed to find some pretty nice recipes. This Peanut Butter Cookie recipe has along with 8oz of peanut butter, 4oz of chopped, roasted hazelnuts and 4oz of chopped dates.

12oz of unsalted butter, two eggs, 1lb 2oz of brown sugar, and 1lb 6oz of flour; 1/4 tsp bk soda

And this is what they look like coming out of the oven, 350 degrees for about 12 minutes
